The company's “mission” is based on a simple concept: the production of cured meats without preservatives.
Today the Giannelli family follows the entire supply chain from the breeding and selection of animals, sourced from nearby pastures, to their processing with artisanal methods using honey, wine, garlic and bell pepper, without the use of chemical gimmicks.
Each of these components has a specific property that contributes to making the cured meat microbiologically stable and safe over time.
The rediscovery and study of ancient recipes, dating back to before 1920, has helped greatly in the preparation of cured meats without chemical preservatives. In fact, the use of natural preservatives was the expedient used in the production of “homemade” cured meats.
