Trapani-style pesto is one of the flagships of Trapani, an excellence of our land.
It is the meeting of tomato and basil with evo oil, garlic and Sicilian almonds. Our Trapanese pesto is made in a mortar and is reminiscent of seaside walks for its fresh yet raw taste.
Agghiata Trapanisa, or Pesto alla Trapanese, owes its origins to the transit by Genoese merchant ships, in the port of Trapani.
They carried typical gastronomic products, including “Genoese agliata,” a pesto prepared with basil, garlic and walnuts.
The Trapanese were so enamored of it that they wanted to adapt the recipe to the products the area offered them.
