Jamones Lazo is a company belonging to the JABUGO Protected Designation of Origin, located in the heart of the Sierra de Aracena and Picos de Aroche Natural Park (Cortegana).
We have extensive experience in the artisanal production of hams and shoulders with sea salt, without preservatives or additives, thanks to the legacy left to us over the centuries by the different generations of inhabitants of these lands. The combination of tradition and technology gives rise to products that are recognized worldwide for their high quality standards.
We are proud of the natural environment of the Huelva pastureland and the excellent natural conditions of its climate, the location and orientation of our drying rooms and cellars and, of course, the meticulous attention to detail in the processing of our products, which can take years, after an arduous process that, over time, bears fruit, making the restrained and anxious wait to taste a product that is unique in the world—100% Iberian acorn-fed ham—well worth it.
Lazo also has the only wooden drying room built in the last 50 years. The wood of these drying rooms, which require constant maintenance, acts as a natural regulator of humidity and temperature, while allowing the fresh air of the Sierra de Huelva to pass through.
This gives the ham unique organoleptic characteristics, as demonstrated by studies conducted by the Faculty of Veterinary Medicine at the University of Cáceres.

Our pigs of this breed provide meat products that stand out for their gastronomic and culinary values of the highest quality, unique in the world.
What makes them so special? These animals filter fat in such an exquisite and unique way that their ham, cured meats, and meats are juicier, have more aroma, and their texture is more delicious: natural and exclusive gastronomic products.

The best environment for pigs to live and thrive is undoubtedly this particular forest characterized by groves of oak, cork oak, and other species, with natural conditions that allow the animals to benefit from the environment and the environment to benefit from them.
